Classic Pot Roast in the Instant Pot


When I was a little girl, I used to love it when my mom made a Pot Roast. It was such a good hearty meal and perfect for cold winter days. She would always make it and serve it with homemade dinner rolls or cornbread. My mom would always make more than enough and would invite the whole neighborhood over for dinner. Her pot roast was a hit with everyone. So, it's no wonder that a pot roast is on my list of favorite meals. I love to eat it, but I hate that it takes all day to roast in a crock pot. However, that all changed when I received my Instant Pot for Christmas. Now I can have a delicious, tender and juicy pot roast ready in an hour and a half or a little longer. Here is how you can too if you own an Instant Pot.

Ingredients:
1 whole Beef Chuck Roast (3 lbs is the perfect size and feeds more than enough)
Salt 
Pepper
Vegetable Oil
1 small yellow onion
1 lb bag of baby carrots
1 lb bag of red baby potatoes
2 cups of beef broth

Method:
Season roast on both sides with salt and pepper. Then add some vegetable oil in Instant Pot. Saute the roast in Instant Pot until lightly browned on both sides. Remove roast from pot then add carrots, potatoes and onions in the pot. Allow them to saute for about 5 minutes. Next add in 2 cups of beef broth, and beef chuck roast. Lock lid into place, set vent to Sealing, turn setting to Manual and cook for 1 hour and 30 minutes.

When timer is finished, carefully quick release pressure and remove lid. Shred the roast with a fork and enjoy a good hearty meal. It's perfect for these cold snow days that we've been having lately.
