Slow Cooker Chicken Taco Soup




































I love slow cooker meals! They seriously are such time savers and make life much easier. When you're a busy mom, you don't have time to stand over the stove for a few hours. Even if you do have time, why would you want to? I love meals that you can just dump into the slow cooker, forget about and go on about your day. At the end of the day, you have a delicious meal waiting on you without all that hard work. One of my favorite slow cooker meals is my go to Chicken Taco Soup.


I love Tacos, but I think I love Chicken Tacos even more. I just love the taco flavoring mixed with Chicken. I feel like it has a much more savory taste. I also love soups, so why not enjoy the two together. This recipe for Chicken Taco Soup is so simple, yet delicious. It will easily become your favorite too.


Ingredients:
1 lb of boneless skinless Chicken Breast Tenders
2 cans whole kernel corn
1 can Pinto Beans
1 can Kidney Beans
2 cans petite diced tomatoes
1 package of taco seasoning
1 package of ranch dressing mix
1/2 bag of mixed pepper and onion blend

Directions:
Add chicken breast tenders to slow cooker then add all other ingredients into the slow cooker. Don't drain or rinse anything except for the Kidney beans. I always prefer to rinse Kidney beans because I don't like how the juices taste on them. Slow cook on low for 8-10 hours or on high for 4-6 hours. Once everything is fully cooked, remove chicken, shred it and then add it back to slow cooker.


This meal is perfect for any night, especially Taco Tuesdays. 

This Chicken Taco Soup is  also great for themed dinner nights, potlucks or for any occasion. It's sure to be a crowd pleaser. It makes more than enough to feed a small army or to warm up for the next day. I love slower cooker meals like this that doesn't require much work on my part and that will feed my family for two days. That takes the stress out of planning as many meals for the week. Be sure to grab a bag of Tortilla Chips to crumble up in the soup. I prefer tortilla chips over crackers for this because it gives it a much more flavorful taste. This Taco Soup is just so delicious!
