Chicken & Bacon Quesadillas




I love Mexican food, I really do! It's one of my favorite types of food. If I could afford to dine out at a Mexican restaurant a few times a week, I definitely would. However, that's just not possible when you're on a budget. So I make my own Mexican Cuisines. I love being creative in the kitchen and making my own recipes. I'm loving these Chicken & Bacon Quesadillas. They are super easy to make and very affordable. I'm sure you will love them too!



Ingredients you will need:

1lb of Chicken Breast shredded or 1 can of Chicken (Whatever is easiest for you)
2 Tbsps of Taco Seasoning
1 Package of soft Tortilla shells
Onions
Peppers
Real Bacon Bits
Shredded Mexican Cheese
Butter or Vegetable Oil



Method:

First, Cook and Shred Chicken. I use canned Chicken because it is much simpler and less time consuming. Then, add onions and peppers in along with chicken. Next, add 2 Tablespoons of Taco Seasoning along with a little water. Let it cook well until onions and peppers are tender.

After chicken, onions and peppers are done, it's time to start assembling your Quesadilla. On half of the soft tortilla shell like shown in above photo, add a fair amount of chicken, onions and peppers. Then top with real bacon bits and shredded Mexican Cheese. Fold other side of tortilla shell over and place quesadilla into a skillet with hot butter or vegetable oil. I prefer butter because it gives the Quesadilla a better taste. Fry on same side until golden brown and then flip it over and fry again until that side is golden brown.
These make about 8-10 Chicken & Bacon Quesadillas and they are oh so good! I love the fact that it's a quick and easy meal that I can enjoy with my family without having to stand in the kitchen for hours. I also love the fact that I can bring Mexican foods to our table without breaking the bank. Let me know if you try these. I'm sure you will love them just as much as we do.
