Deciding what to cook for supper can be a tough decision, especially in the winter season when it feels as though only a hearty, homemade feast will do. So here are a few easy peasy, winter suppers that will have you warmed and glowing from the inside out, with the minimum of time, fuss and effort.

Chicken Piccata

This chicken recipe makes for an excellent supper dish. It is quick and filling. In a bowl mix flour, salt and pepper. Take four boneless skinless chicken breasts and pound them into a half-inch thickness. Now dip the chicken in the flour and coat both sides well. Take a pan, add butter or oil, and heat over a medium heat. Fry, the chicken until it is brown on both sides and pour wine into the pan to bring the mixture to boil. Now, let the chicken cook uncovered for around 12 minutes, or until the outer sides become crispy. Your Chicken Piccata is ready. Serve with lemon juice and parsley.

Potato & Sausage Skillet

If you know how to make fried potatoes, but you fancy a change, you could do worse than prepare a potato & sausage skillet. Take 3-4 potatoes, slice and add a little water. Microwave them for around 5 minutes until they are tender. While the potatoes are in the microwave, mix brown sugar, mustard, pepper, thyme, and vinegar. Take a pan and heat oil on medium temperature and put sliced onions and your sausages in the oil until onions are tender. Now add the potatoes and cook the mixture until it becomes light brown which takes roughly 5 minutes. Pour in the brown sugar mixture and bring it to the boil, and your potato skillet is ready to be served.

Chicken Pot Pie

Everyone loves a pie on a cold winter’s evening. This particular recipe is an excellent option for supper and late-night snacks. Preheat your oven to 220-degree Celsius. Take potatoes and carrots, chop, and place in a large saucepan with water, and bring to the boil. Keep them on the stove until they are tender. Now, in a separate skillet, heat butter on a medium heat and add onions. Cook until they are soft. Mix them in flour and spices until they are tender, now add broth and milk and bring the mixture to boil. Add the chicken, peas, corn and potato mixture and cook for a further 2 minutes. Unroll a ready-rolled pie crust as per the instructions and add the chicken and pea mixture and cover the dough adequately with the remaining crust. Bake for 30 minutes or until they are golden brown. Make sure you wait for 15 minutes before cutting into the pie.

Spaghetti and Meatballs

For pure, simple, homemade comfort food, it’s hard to beat spaghetti and meatballs. In an oven, heat oil for a couple of minutes and add onions until they are sautéed. Add garlic and tomato paste, cook for a few more minutes until the tomatoes are soft. Now beat four eggs, add a half cup of milk, parmesan cheese and water, and bring to boil. Add beef in the mix to cook for about 40 minutes and turn the heat off. Shape into meatballs and fry them in oil until they are no longer pink, now add tomato sauce and bring to boil. Simmer the mixture until everything is mixed correctly, keep stirring occasionally. Serve your meatballs with hot spaghetti.
