There is nothing better than a hot steamy bowl of potato soup when you’re sick. It’s the perfect comfort food. It’s also perfect for those cold fall days like we are currently having. Some of my fondest childhood memories are of when my mom would make my brother and I Hearty Potato Soup. It's a recipe that I hold very near and dear to my heart. However, it's one that I would love to share with you because I know you will love it as much as we do.
Ingredients you will need:
5 or 6 Potatoes (Quartered)
1 Medium Sweet Onion (Quartered)
Celery
Carrots
1/2 tsp Crisco
Salt & Pepper to taste
Parsley Flakes to taste
1/2 cup Milk
Shredded Cheese (Optional)
Method:
Once Potatoes and Onion are cut and quartered, cut up as much carrots and celery that you prefer. Add everything to cooker and fill enough water to cover all ingredients. Once water is added, you can also add 1/2 tsp Crisco, Salt, Pepper and Pasley Flakes to taste. Cook on Medium to High heat until potatoes begin to soften and get a little mushy. Be sure to mash potatoes and veggies to make sure that they have cooked long enough. After everything has cooked and softened, add 1/2 cup of milk to boiling water and boil for 2-3 minutes then turn to simmer so that soup can thicken. Remove from heat, sprinkle some cheese on top and enjoy.
This really is the simplest yet most delicious Potato Soup recipe that I have ever tried. You can't go wrong with a good hot bowl of Hearty Potato Soup to warm you up during the cold months or when you're sick. To me, there is nothing better!
