Harvest Soup


Have you ever tried Harvest Soup? If not, you are definitley missing out. It is the perfect soup for a cool Autumn Day. It's a comforting soup and I'm all about comfort food. My cousin passed this recipe on down to me and it has became one of my favorites. I seriously could eat it once a week or more. 

What I love about Harvest Soup is that it's so simple to make. My favorite recipes are those that are quick to make because I don't have time to stay in the kitchen all day. Just because Harvest Soup is easy to make, doesn't mean it lacks on taste. It is packed with delicious flavors that are just so comforting to your taste buds.

The ingredients that you will need are the following:


3- cans of sliced new potatoes

2 - 10.5 oz cream of chicken soup

2 -bags frozen California Medley Mixed Vegetables (Broccoli, Cauliflower and Carrots) 

1- onion

1/2 block of Velvetta Cheese cut into chunks


Place in potatoes and onions in pot and cover with water. 

Add salt and pepper.

Cook until almost done.

Add both bags of frozen vegetables.

Add both cans of cream of chicken soup.

Cook until tender.

Add 1/2 block of Velvetta Cheese cut into chunks and stir until cheese is melted. Do NOT boil. Cheese will scorch. 

Serve with warm bread and enjoy!
